Quiche peaked in the ’70s and ’80s, so nowadays, it can feel a bit…dated. But personally, we think it deserves a major comeback. It’s easy to prepare (especially if you use store-bought pie crust), it makes great leftovers and it’s a fabulous way to use up whatever random bits of cheese, meat and veggies are languishing in the back of your fridge.

In fact, instead of relegating quiche to Mother’s Day brunch and bridal showers, we think it deserves a spot in your weekly dinner (or breakfast) rotation.
