4 chicken cutlets
12 ounces top round beef
1¼ pounds thin pork cutlets
10 eggs
6 bone-in, skin-on chicken thighs
4 slices unsmoked bacon

4 ounces shredded mozzarella cheese
3 ounces grated Parmesan cheese
3 ounces grated Pecorino Romano cheese
