Cloud Bread Is the Hottest New TikTok Trend, and It’s So Much Fluffier Than the 2016 Version

TikTok has sparked food trends like pancake cereal, Dalgona coffee and froggy bread. Next on our to-bake list? Cloud bread.

If you just felt a weird sense of déjà vu, pat your stellar memory on the back. Cloud bread, an adorable carb-free snack, first went viral in 2016. It was made with a batter of eggs, cream cheese, honey and baking powder. The eggs are separated so the whites can be whipped with the baking powder, which gives the bread its signature airiness. When baked, they turn into golden-brown bread thins that are prime for making sandwiches or mini pizzas.

But TikTok cloud bread is a totally different animal. Popularized this time around by user @linqanaaa, this version is more like a super airy, fluffy meringue (hello, egg whites and sugar) spiked with cornstarch. Its texture is comparable to cotton candy. Cornstarch is famous for its thickening qualities, but in this case, it also helps turn the outside of the bread crisp and brown.  

Some TikTok users have tried everything from dyeing cloud bread with food coloring to adding vanilla or strawberry extract for flavor to garnishing it with almond slices. Here’s the basic recipe, ready to zhuzh up anyway you'd like:

Ingredients

  • 3 egg whites
  • ⅛ cup cornstarch
  • ¼ cup sugar

Step 1: Preheat the oven to 300°F. Put the egg whites in a bowl or stand mixer. Beat them until bubbly.

Step 2: Add the cornstarch and sugar to the bowl and beat until combined.

Step 3: Line a baking sheet with parchment paper. Dump the batter onto the baking sheet and mold it into a mound with a rubber spatula.

Step 4: Bake for 25 minutes or until golden.
