Bacon and eggs, peanut butter and jelly, Caesar salad and fries: Though new to the ranks of classic food pairings, everyone’s favorite starch and salad combo has officially made the jump from fleeting TikTok trend to girl-dinner-bar-tab staple. And now, thanks to the fast-casual salad restaurant Sweetgreen, you can enjoy the combo (and so much more) on the go with zero guilt. Meet the Ripple Fry, Sweetgreen’s healthier take on your favorite fast-food side.

Sweetgreen’s ripple fries are made with just five simple ingredients you probably have sitting in your pantry: russet potatoes, avocado oil, sea salt, parsley and potato starch—the added crispy coating that gives each textured potato edge that iconic French fry crunch. According to Chef Chad Brauze, Head of Culinary at Sweetgreen, this simplicity is intentional, laddering up to the brand's philosophy of offering food freshness and transparency. “Creating the perfect French fry is both an art and a science,” he explains. “We know people love crispy, flavorful fries, so we set out to craft the best un-fried version possible.” Oh, did I mention they’re air fried (not deep fried) meaning no added seed oils or high levels of trans fats? “Ripple Fries deliver the perfect balance of crunch and flavor—great for dipping, snacking or pairing with any Sweetgreen order.”

And after giving them a try, I must concur. More cottage than crinkle, the ripple fries are thinly sliced potato wedges that strike a unique balance between the crispiness of a shoestring and the meatiness of a steak fry. Ever the nostalgic millennial, they remind me of a childhood favorite my family would have every Sunday morning—fried breakfast potatoes—only better (sorry, mom) thanks to the signature wavy cutting technique that helps generate optimal crispiness on each air-fried layer. Served with your choice of garlic aioli or pickle ketchup (two new sauces dreamed up alongside this salty potato creation) ripple fries feature everything you love about your favorite fast-food side without any of the bad stuff, proving it’s possible to have your pommes frittes and eat them too.

When it comes to sauces, you can’t go wrong with either, but as a self-proclaimed pickle-hater, I was shocked by how much I enjoyed the pickle ketchup. While acid and sugar do their usual catsup dance amongst the deep tomato flavor, the addition of dill is a subtle but refreshing surprise (and I’d be remiss not to mention its timely invention alongside the perennial pickle trend).

As of today, ripple fries are available at all Sweetgreen locations nationwide. So go on, embrace your basic and order that kale Caesar with a side of ripple fries and an OLIPOP vintage cola—no judgment here. (In fact, can you make that two?)
