Sweet Potato Hummus

Sweet potato, meet hummus. The humble spud has proved to be the most versatile ingredient in our kitchen, and this recipe is no exception. Your only decision? What to dip in it.


Ingredients

4 cups canned chickpeas, drained

1 garlic clove, smashed

3 tablespoons tahini

¼ cup fresh lemon juice

⅓ cup extra-virgin olive oil

1 small sweet potato—peeled, chopped and baked

Salt and freshly ground black pepper, to taste

Pita chips, tortilla chips, crackers or chopped vegetables, as desired for dipping

Directions

1. In the bowl of a food processor, combine the chickpeas, garlic, tahini, lemon juice, olive oil and sweet potato.

2. Puree until smooth; season with salt and pepper.

3. Serve with your choice of chips, crackers and veggies.
