Once you chop the onion, garlic and broccoli rabe, you’re halfway to dinner.
Sometimes, you just want to have Sunday supper on a Wednesday. This skillet gnocchi with sausage and broccoli rabe recipe will deliver. It’s been a PureWow reader favorite since its debut in 2017, given its flavor and how easy it is to prepare. So, we set out to retest it, offering step-by-step photos (which you can find at the bottom of this recipe), along with tips for perfecting this 30-minute meal. And, before you get cooking, there’s one thing worth noting.
“The recipe calls for pre-cooked sausage,” says PureWow food editor Taryn Pire, who tried the recipe at home. “So, I’d advise cooking it according to package instructions in a large skillet while the water boils, transferring it to a plate or cutting board, slicing it into rounds, then picking up at step two in the same pan. That way, you make the most of all the flavorful drippings left behind, as pictured.”
There’s also minimal prep involved, making the dish ideal for a busy weeknight. “Once you chop the onion, garlic and broccoli rabe, you’re halfway to dinner.” How’s that for easy?
As for overall flavor, Pire says it’s earthy, savory and oh-so comforting. “Spice things up by going heavy on the crushed red pepper flakes or by using spicy Italian sausage instead of sweet.”
1 pound store-bought gnocchi
2 tablespoons unsalted butter
1 sweet onion, sliced
2 garlic cloves, minced
1 pound Italian sausage, cooked, sliced
1 bunch broccoli rabe, cut into bite-size pieces
½ cup chicken broth
Kosher salt and freshly ground black pepper, to taste
½ teaspoon crushed red pepper flakes, to taste (optional)
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Drain the gnocchi.
2. In a large skillet over medium heat, melt the butter. Add the onion and sauté until translucent, about 5 minutes. Add the garlic and sauté until fragrant, about 1 minute more.
3. Add the sausage and cook until it browns, about 4 minutes. Add the broccoli rabe and chicken broth and bring to a simmer.
4. Continue to cook, tossing frequently, until the broccoli rabe is wilted and tender, about 5 minutes. Season with salt, pepper and red pepper flakes (if desired) to taste.
5. Stir in the gnocchi, Parmesan and parsley and toss well until combined. Serve immediately.
