Sage Bee's Knees Cocktail
A warm afternoon calls for a refreshing drink, so we're teaming up with Aida Mollenkamp of Salt & Wind to perfect our cocktail game. It doesn't get any easier than the Sage Bee's Knees, made with only four ingredients: gin, lemon, honey and sage leaves.
Ingredients
½ cup honey
½ cup cold water
1½ ounces gin
½ ounce freshly squeezed lemon juice
½ ounce honey syrup
3 fresh sage leaves, divided
Ice
Directions
1. Make honey syrup by bringing the honey and water to a simmer in a small saucepan until the honey dissolves. Let cool to room temperature.
2. Combine the gin with the lemon juice, ½ ounce honey syrup and 2 sage leaves in a cocktail shaker; stir to dissolve the honey syrup.
3. Fill the shaker halfway with ice and shake until thoroughly chilled, about 10 seconds. Strain into a chilled cocktail glass.
4. Press the remaining sage leaf between your hands over the glass and then drop it into the drink. Serve immediately.
