Mushroom and Turkey Sloppy Joes

This elevated (and better-for-you!) version of a traditional sloppy joe features a filling that’s half Simple Truth Organic Whole Baby Bella Mushrooms and half Natural Lean Ground Turkey, so it’s packed with protein that’ll help keep you satisfied. Plus, the flavor is enhanced with Double Concentrated Tomato Paste, Worcestershire sauce, mustard, brown sugar and chili powder. Top it off with Colby Jack Cheese Slices and serve on a potato bun.

Ingredients

2 tablespoons Simple Truth Organic Unfiltered Extra-Virgin Olive Oil

12 ounces Simple Truth ground turkey

Kosher salt and freshly ground black pepper (Simple Truth Organic Whole Black Peppercorns or Ground Black Pepper)

12 ounces Simple Truth Organic Whole Baby Bella Mushrooms

1 medium Simple Truth Organic yellow onion, diced

1 green bell pepper, seeded and chopped

1 tablespoon Organic Simple Truth Minced Garlic

½ teaspoon crushed red pepper flakes

1 tablespoon Simple Truth Organic Ground Chili Powder

⅓ cup Simple Truth Organic Double Concentrated Tomato Paste

2 teaspoons Simple Truth Organic Oregano Leaves

1 cup Simple Truth Organic Tomato Sauce

2 tablespoons Simple Truth Organic Vegan Worcestershire Sauce

¼ cup packed Simple Truth Organic Light Brown Sugar

2 tablespoons Simple Truth Dijon Mustard

Directions

1. In a large Dutch oven or heavy-bottomed pot, add the olive oil and heat over medium-high heat. Add the Simple Truth Ground Turkey and cook until browned and cooked through, breaking up with the back of a wooden spoon, 7 to 9 minutes. Season with salt and pepper.

2. Add the Simple Truth Organic Baby Bella Mushrooms, onion, bell pepper and garlic and cook until softened, browned and the liquid has mostly evaporated, 7 to 9 minutes. Season with salt and pepper. Move the veggies and meat over to one side of the pot and add the crushed red pepper flakes, Simple Truth Organic Chili Powder, Simple Truth Organic Double Concentrated Tomato Paste and Simple Truth Organic Oregano Leaves. Stir and cook until the spices are toasted and the tomato paste has caramelized, about 2 minutes. Fold the tomato and spice mixture into the meat and mushroom mixture.

3. Add the Simple Truth Organic Tomato Sauce, Simple Truth Organic Vegan Worcestershire Sauce, Simple Truth Organic Light Brown Sugar and ¾ to 1 cup water. Season with salt and pepper and bring to a simmer. Simmer over low heat, partially covered and stirring occasionally, until the mixture thickens and the flavors meld, 20 to 25 minutes.

4. Taste and adjust the seasoning, then stir in the Dijon mustard. Serve over buns with a slice of Simple Truth Organic Colby Jack Cheese Slices on top if desired.
