Mango Guacamole

We know, we know: Mango sounds like an unusual ingredient to use in guacamole. But it adds a burst of tangy sweetness that melds delightfully with creamy avocados. Throw in some lime juice, mint and serrano chili and you’ll be double dipping like nobody’s business.
Ingredients
2 avocados
1 mango, peeled and diced
1 cup chopped fresh parsley
1 cup minced scallion
¼ cup chopped fresh mint
1 serrano chili, minced
1 tablespoon lime juice
Kosher salt and freshly ground black pepper
Directions
1. In a large bowl, mash the avocados with a fork.
2. Stir in the mango, parsley, scallion, mint, serrano chili and lime juice. Season with salt and pepper.
