Ketogenic Cherry Tomato Tulips
When you get sick of snacking on keto fat bombs and bacon strips, whip up these pretty-as-can-be ketogenic cherry tomato Boursin tulips. They take 15 minutes to assemble and will totally tide you over until lunchtime. (Plus, Halle Berry eats them too.)
Ingredients
10 cherry or grape tomatoes
10 scallions, cleaned and trimmed
One 5.2-ounce container Boursin cheese
⅓ cup buttermilk
Directions
1. Use a paring knife to partially quarter the tomatoes, leaving one of the narrower sides intact.
2. Stick a toothpick through the intact side of a tomato and into the trimmed end of a scallion to attach the two. Repeat with all of the tomatoes and scallions.
3. In a small bowl, mix the Boursin and buttermilk until smooth and creamy. Transfer the mixture to a zip-top plastic bag and snip a ¼-inch-wide opening at one of the corners of the bag.
4. Place the open tip of the bag inside each tomato and squeeze to fill with the cheese mixture. Serve immediately, or refrigerate for up to 4 hours before serving.
