The Clean Plate

We’d be willing to try practically anything to achieve glowing, clear skin like Gwyneth Paltrow’s. Luckily, she spills her secrets in her new cookbook, The Clean Plate: Eat, Reset, Heal.

One of our favorite recipes? The blueberry cauliflower smoothie. (Yep, you heard us.)

“With antioxidant-rich blueberries and protein-packed almond butter, this smoothie is one I often throw together after a workout,” Paltrow explains in her book. “Buy organic wild blueberries, if you can find them.”

The mighty cruciferous vegetable makes the smoothie filling and creamy, like adding a banana—but with less sugar and fewer carbs.

Ingredients

½ cup frozen blueberries

½ cup frozen cauliflower

1 tablespoon unsweetened almond butter

¾ cup unsweetened almond milk

1 date, pitted and roughly chopped

Juice of ½ lime

Directions

Combine the frozen blueberries, cauliflower, almond butter, almond milk, date and lime juice in the bowl of a high-speed blender. Blend until smooth.
