Grilled Peach, Chicken and Ricotta Pizza
Peaches are in season, like, right now. So grab some from the market and make this simple grilled peach, chicken and ricotta pizza tonight. We use store-bought dough, so it really is the easiest.
Ingredients
2 chicken breasts
2 peaches, pitted and halved
1 red onion, peeled
Olive oil
Salt and freshly ground black pepper
1 ball store-bought pizza dough
1 cup ricotta cheese
½ cup Parmesan cheese
Fresh basil leaves, to taste
Directions
1. Preheat the oven to 475°F. Set out a baking sheet or pizza stone.
2. Brush the chicken breasts, peach halves and red onion with olive oil; season with salt and pepper to taste.
3.. Grill the peaches and onion until they are charred and tender, 7 to 9 minutes. Grill the chicken until fully cooked, 9 to 11 minutes.
4. Let the peaches, onion and chicken cool slightly, then thinly slice everything.
5. Roll out the pizza dough to ½-inch thick and place onto the baking sheet or pizza stone. Top the dough with ricotta cheese and spread it into an even layer. Top with slices of grilled peach, onion and chicken. Sprinkle with ½ cup Parmesan cheese.
6. Bake the pizza until the crust is golden and crisp, 15 to 17 minutes.
7. Cool 10 minutes; garnish with fresh basil leaves. Serve immediately.
