Foil Packet Peach Crisps

So you’re going camping. Just because you’re missing out on creature comforts for a few days doesn’t mean you have to skip dessert. Enter the foil packet peach crisp. It’s a make-ahead wonder that can be cooked on a campfire and tastes like a spoonful of summertime. Oh, and you don’t even have to be camping to enjoy it—make it on your grill in the backyard, too.

Vanilla ice cream may not be an option…unless you pack a cooler. (Wink, wink.)


Ingredients

½ cup all-purpose flour

¼ cup rolled oats

4 tablespoons brown sugar, divided

½ teaspoon kosher salt

½ teaspoon cinnamon

6 tablespoons butter, melted

4 peaches, pitted and thinly sliced

1½ tablespoons cornstarch

Directions

1. In a large bowl, whisk together the flour, oats, 2 tablespoons brown sugar, salt and cinnamon. Pour in the melted butter and stir with a silicone spatula until the mixture is evenly combined. Set aside.

2. In another large bowl, stir together the peach slices, cornstarch and remaining 2 tablespoons brown sugar until coated.

3. Divide the peaches evenly among four large squares of aluminum foil. Top each with some of the crumble mixture, then tightly seal the foil into packets. At this point, you can refrigerate the packets or store them in a cooler until ready to use.

4. To cook the crisps, place the packets on a hot grill (or nestle in the coals of a campfire) and cook until the packets are steaming, the peach juices are bubbling and the crisp is slightly golden, flipping occasionally, 15 to 20 minutes. Cool slightly before serving.
