Bitter Greens Salad with Herby Ranch Dressing

We love a good ol’ Caesar…or even just a pile of mixed greens with a creamy dressing. But when a salad needs to have enough pizazz to cut through a rich meal (say, a roast chicken), we reach for a recipe that’s more complex. With biting radicchio and frisée (plus tart apples and pistachios), this bitter greens salad checks all the right boxes. Pair it with an herby, creamy homemade ranch dressing and your dinner guests will go wild.


Ingredients

Dressing

½ cup sour cream

½ cup buttermilk

1 tablespoon minced parsley

1 tablespoon minced dill

1 tablespoon minced chives

1 garlic clove, grated

1 tablespoon lemon juice, plus more as needed

Kosher salt and freshly ground black pepper

Salad

1 head radicchio, halved and thinly sliced crosswise

6 ounces frisée, torn into bite-size pieces

1 Granny Smith apple, thinly sliced

2 tablespoons chopped toasted pistachios

Directions

1. In a small bowl or liquid measuring cup, whisk together the sour cream, buttermilk, parsley, dill, chives, garlic and lemon juice. Season to taste with salt and pepper. Adjust the consistency as needed with more lemon juice, if you prefer a thinner dressing.

2. To assemble the salad, toss together the radicchio, frisée and apple. Drizzle with the dressing and sprinkle with the pistachios.
