Baileys Cookies and Cream Parfait

See ya ‘round the block, yogurt and fruit parfaits. There’s a new layered dish in town that’s decidedly less virtuous (in the best way possible). Go ahead and dig your spoons into this cookies-and-cream concoction, featuring Baileys.


Ingredients

1/3 cup heavy cream

1 cup semisweet chocolate chips

1/3 cup Baileys Irish Cream

8 ounces cream cheese, at room temperature

1¼ cup heavy cream

1/3 cup confectioners’ sugar

1 teaspoon pure vanilla extract

1 cup whipped cream

2 cups Oreo cookie crumbs (from about 1/2 package of Oreos)

Directions

1. In a small pot, heat the cream to a simmer over medium heat. Place the chocolate chips in a medium heat-safe bowl.

2. Pour the hot cream over the chocolate and stir to combine. Stir in the Baileys, then set aside.

3. In the bowl of an electric mixer fitted with the whip attachment, whip the cream cheese with heavy cream and confectioners sugar until they reach medium peaks. Add the vanilla extract and mix to combine.

4. Begin to layer the parfait: Spoon about ¼ cup of the cream cheese mixture into the base of the glass. Top with 2 tablespoons of cookie crumbs, then 2 tablespoons of chocolate sauce. Repeat until there are two layers like this in each glass.

5. Top each parfait with 2 to 3 tablespoons of whipped cream. Garnish with any remaining cookie crumbs. Serve immediately, or store in the refrigerator, covered, for up to 2 days.
