The Best Croutons Ever
We're all about getting our daily dose of greens, but sometimes you just need to add a little crunch to the mix. Enter these delightful croutons, which immediately upgrade even the blandest of kale blends. And if you're really anti-lettuce, they're pretty wonderful atop a bowl of soup or even eaten on their own as a snack (we won't tell).
Ingredients
½ bunch parsley
½ bunch thyme
½ bunch sage
4 garlic cloves
¼ cup grated Parmesan cheese
½ cup olive oil
Salt and freshly ground black pepper
¾ teaspoon red-pepper flakes
1 loaf of crusty Italian bread, cut into 1-inch cubes
Directions
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2. In the bowl of a food processor, pulse the parsley, thyme, sage, garlic and Parmesan to combine. Process until it’s very finely chopped, then add the olive oil and blend to combine.
3. Season the mixture with salt, pepper and red-pepper flakes.
4. Arrange the bread cubes in an even layer on the prepared baking sheet. Pour the herb mixture over the bread and toss to coat.
5. Bake until the croutons are golden and fragrant, 7 to 9 minutes. Cool completely before serving. Keep stored in an airtight container until ready to use (up to a week).
