First things first: If you're lacking prep space, Jo says you need to "clear your counter of everything but the essentials." Read: Everyday spices, cooking oils and utensils. She then goes on to suggest using your "cutting boards to keep items organized." By using your cutting board as a decorative tray of sorts, the win is twofold: You corral your essentials in a neat vignette and your cutting board doubly earns its keep as countertop real estate.
