Memorial Day is here, and that means that summer—aka grilling season—has officially begun. To celebrate the warmest (and tastiest) time of the year, we’ve rounded up seven dinners to cook on the grill this week. Don’t let the coals intimidate you: These recipes are foolproof for pitmasters and newbies alike, from jerk chicken cutlets to grilled flank steak.

Monday: Grilled Jerk Chicken Cutlets With Mango Salsa

The warm, spicy notes of the jerk seasoning pair beautifully with the sweet, bright mango salsa. (We’d make a second batch to serve over fish or guacamole, if we were you.)

Tuesday: Grilled Cauliflower Steaks With Avocado-cilantro Sauce

This vegetarian stunner is as unexpected as it is elegant. Our favorite part? Grilled summer corn makes a delicious cameo, alongside crumbled cotija cheese.

Wednesday: Salmon Burgers

You could cook these protein-rich patties in a skillet, but we’d choose a piping hot grill any day, because char marks make everything tastier. Crown the burgers with a mound of coleslaw and serve with a side of roasted potatoes.

Thursday: Beef Flatbread With Herb Sauce

Proof that flatbreads can be delectable without the help of cheese. Save time by starting with a pre-cooked flatbread or pizza crust instead of store-bought pizza dough.

Friday: Grilled Honey-sriracha Chicken Drumsticks With Fennel-cabbage Slaw

They’re sticky, spicy and messy in all the right ways. If you prefer not to eat with your hands, the sauce works just as seamlessly on chicken breasts and thighs.

Saturday: Grilled Caprese Skewers With Halloumi And Sourdough

Salad is better on a stick, trust us. Especially when there’s toasty cubed bread and tangy halloumi cheese involved. Might we suggest upping the seasonal ante with grilled zucchini?

Sunday: Grilled Flank Steak With Lemon-herb Sauce

Don’t let the long cooking time deter you—most of it is hands-off marinating. Just think of it as a built-in cocktail hour. Margaritas, anyone?
