The days are longer, the weather is warmer and our once-empty schedules are (very) slowly getting busier, meaning we have less time to fuss over dinner. Presenting seven meals to cook this week that will only take you 25 minutes or less from start to finish, including one of our favorite Cinco de Mayo recipes.

Monday: 10-minute Pad See Ew
This savory noodle stir-fry is lightning fast to begin with, but you can shave off even more time by mixing the sauce in advance. (It’ll keep in a cool, dry place for up to two months, BTW.)
Tuesday: 15-minute Buffalo Chicken Sliders
Rotisserie chicken does it again. Just shred the store-bought bird, toss the meat in buffalo sauce with bits of celery and pile it onto your favorite slider buns.
Wednesday: Spicy Shrimp Tacos With Mango Salsa
Celebrating Cinco de Mayo? Kick the fiesta off with these 20-minute handhelds that scream summer. If the weather’s right, feel free to grill the shrimp instead of sautéing them.
Thursday: 20-minute Mushroom Stroganoff
This dish is peak vegetarian comfort food. Think tender, garlicky mushrooms cooked with punchy pickled onions, capers and cornichons. The pièce de résistance is a dash of whiskey and a swirl of crème fraiche.
Friday: 15-minute Lemony Broccolini Pasta
If you can boil water, this citrus-kissed beauty is within reach. We’ll take ours with extra pine nuts and Parm, please.
Saturday: Camarones Al Mojo De Ajo (shrimp In Garlic Sauce)
Who knew your pantry had a dish this delicious hiding inside? Serve the shrimp with white rice or dinner rolls—it’d be a shame to waste all that leftover lemon butter.
