Maybe it’s because I’m a food editor, but it feels like Taco Bell always has something new to devour on the menu. (Take the indulgent, customizable Cheesy Dipping Burritos, which come with a side sauce of your choice, or the shockingly tasty chicken nuggets.) The latest innovation at the fast food chain? Birthday Cake Churros, which were created in collaboration with Milk Bar. Once they hit stores, I headed to the nearest location to review them.

In case you haven’t had the immense pleasure of eating a fresh churro, it’s a treat made by piping dough (traditionally choux pastry) into hot oil and frying it to crispy perfection. You’re likely familiar with Mexican-style churros, which are coated in cinnamon sugar and sometimes served with chocolate or dulce de leche for dipping.

This riff on the dessert is as festive as it is photogenic. Think warm, crispy churros, stuffed with creamy birthday cake frosting and rolled in pink sanding sugar and rainbow nonpareils. Available for a limited-time, the churros will cost you $2 for one or $3 for two. It’s the second collaboration between the brands since the launch of Strawberry Bell Truffles back in 2022.

Aesthetically, the churros were pretty perfect. They were smaller than O.G. churros you’d find in Mexico, but flawlessly crispy on the outside (doubly so, thanks to the sprinkles) and super tender on the inside. They were so warm and fresh that the temp of the filling wasn’t far off from molten lava, so I’d wait a few minutes before digging in.

I thought the ratio of churro to filling was solid, but I also would’ve liked the filling to be a touch tangier, like a mild cream cheese frosting. However, I appreciate that this is a shareable alternative that arguably feels more substantial than Taco Bell’s other desserts, like Cinnabon Delights and Cinnamon Twists.

In summary, hit the drive-thru with a candle in hand—this celebratory sweet is certainly worth a try.
