Sometimes, less is more. But sometimes, you’re making carrot cake. These mini layer cakes have the same wow-factor as a big version, with a lot less fuss.

We didn’t pluck these straight from the garden, but it looks like it, right? The cherry on top of these cheerful minis is the mascarpone frosting that’s flavored with freeze-fried berries. Yum.
